"When I started butchering,

What I saw was nothing but the whole ox.

"Nowadays, I meet it with my mind

My sensory organs are inactive

有一個名叫丁的廚師替梁惠王宰牛,手所接觸的地方,肩所靠着的地方,腳所踩着的地方,膝所頂着的地方,都發出皮骨相離聲,刀子刺進去時響聲更大,這些聲音沒有不合乎音律的。它竟然同《桑林》、《經首》兩首樂曲伴奏的舞蹈節奏合拍。

梁惠王說:“嘻!好啊!你的技術怎麼會高明到這種程度呢?”

庖丁放下刀子回答說:“臣下所探究的是事物的規律,這已經超過了對於宰牛技術的追求。當初我剛開始宰牛的時候,(對於牛體的結構還不瞭解),無非看見的只是整頭的牛。三年之後,(見到的是牛的內部肌理筋骨),再也看不見整頭的.牛了。現在宰牛的時候,臣下只是用精神去接觸牛的身體就可以了,而不必用眼睛去看,就象視覺停止活動了而全憑精神意願在活動。順着牛體的肌理結構,劈開筋骨間大的空隙,沿着骨節間的空穴使刀,都是依順着牛體本來的結構。宰牛的刀從來沒有碰過經絡相連的地方、緊附在骨頭上的肌肉和肌肉聚結的地方,更何況股部的大骨呢?技術高明的廚工每年換一把刀,是因爲他們用刀子去割肉。技術一般的廚工每月換一把刀,是因爲他們用刀子去砍骨頭。現在臣下的這把刀已用了十九年了,宰牛數千頭,而刀口卻像剛從磨刀石上磨出來的一樣。牛身上的骨節是有空隙的,可是刀刃卻並不厚,用這樣薄的刀刃刺入有空隙的骨節,那麼在運轉刀刃時一定寬綽而有餘地了,因此用了十九年而刀刃仍像剛從磨刀石上磨出來一樣。雖然如此,可是每當碰上筋骨交錯的地方,我一見那裏難以下刀,就十分警懼而小心翼翼,目光集中,動作放慢。刀子輕輕地動一下,嘩啦一聲骨肉就已經分離,像一堆泥土散落在地上了。我提起刀站着,爲這一成功而得意地四下環顧,一副悠然自得、心滿意足的樣子。拭好了刀把它收藏起來。”
