中國的豆腐文化

When you walk into a college canteen or a restaurant on the street in China, you can often see tofu on the menu. Yes, tofu! Tofu is a big part of our daily food.

當你在中國走進一家大學餐廳或街道上的一家餐館時,你可以經常看到菜單上有豆腐。是的,豆腐!豆腐是我們日常食物中的重要部分。

Tofu is said to appear in the Western Han Dynasty. At the time, Liu An, the grandson of Emperor Liu Bang, was eager to learn the secret of longevity, so he went deep into the mountain to find medicine for being long-lived. He failed in his efforts to produce immortal pills; instead, he created a kind of white material with attractive smell. The brave local farmers tried to taste the product, only to find that it was delicious. And it was named “bean curd” or “tofu”. Liu An became an unexpected inventor of tofu, and his hometown, Shouxian county of Anhui province, has been called the “hometown of tofu”.

豆腐據說出現於西漢時期。當時,漢高祖劉邦的孫子劉安,渴求長生不老的祕訣,爲此他走進深山尋找長生不老仙丹。他沒有煉成長生不老仙丹,但卻製成了一種味道芳香的白色食品。膽大的當地農民品嚐了這種製品,不料竟發現它味道很是鮮美,並把它叫做“豆乳”或“豆腐”。劉安出乎意料地成爲了豆腐的發明者,而他的故鄉,安徽省壽縣也被稱爲“豆腐之鄉”。

Simple in production and cheap in cost, tofu soon became people’s favorite delicacy. After the Song Dynasty, the culture of tofu expanded even further. Many scholars and famous people also took part in spreading the culture. The great writer of the Northern Song Dynasty, Su Dongpo, took a special fancy to tofu and invented a tofu dish called Dongpo tofu.

豆腐製作簡單,成本低廉,很快就成爲人們喜愛的美味佳餚。宋代以後,豆腐文化得到進一步發展。許多學者和著名人士也參加到傳播豆腐文化中來。北宋偉大的作家蘇東坡對豆腐有一種特別的喜好,併發明瞭一道名爲“東坡豆腐”的菜餚。

It is said that in the 8th year of Kangxi Emperor’s rule of the Qing Dynasty, Wang Zhihe, born in Xianyuan county, Anhui province, went to Beijing to attend the imperial examination. Unfortunately, he failed the exam, so he had to make a living in Beijing by making tofu. One day, his tofu did not sell well and there was much left. Afraid that the tofu would go bad, he cut the tofu into small pieces and placed them into a jar with salt. Then, he closed the mouth of the jar and keep tofu in this way. Some days later, he opened the jar and found to his surprise that the tofu inside the jar was quite tasty. So he managed to sell it, which soon won the praise of the customers and then became the famous Wang Zhihe fermented tofu.

據說清朝康熙八年,安徽省仙源縣人士王致和進京趕考,不幸名落孫山,因此不得不在京賣豆腐爲持生計。一天,他的豆腐賣得不好,剩餘很多,由於擔心豆腐會變質,他就把豆腐切成小塊放上一些鹽放進小罈子裏,然後他封閉了壇口將豆腐封存起來。過了些日子,他打開壇蓋,竟然發現裏面的豆腐很好吃。於是他設法把這種豆腐賣了出去,很快就贏得了顧客的讚許並由此誕生了著名的王致和腐乳。

A woman who is beautiful but poor is known as “tofu xishi” (bean curd beauty). Xi Shi is known as one of the Four Great Beauties of China. It has been said while Xi Shi was washing her veil, her beauty caused fish to freeze and sink to the bottom of the river. Later, her name, Xi Shi, became synonymous with beauty. In Lu Xun’s novel Hometown, a beautiful tofu shop owner, Aunt Yang, is nicknamed “tofu xishi.” From then on, people often used “tofu xishi” to call those who have a good face but are born to a poor family — not necessarily relating to tofu.

一個漂亮但窮困的女人就會被人稱作“豆腐西施”。西施擁有中國四大美人之美譽。相傳西施在溪邊浣紗時,水中的.魚兒被她的美貌驚呆而沉入河底。後來她的名字西施也就成了美女的代名詞。在魯迅的小說《故鄉》中,有一位漂亮的豆腐房老闆娘楊二嫂就被戲稱爲“豆腐西施”。從那時起,人們往往用“豆腐西施”來稱呼那些有着漂亮面容卻出身貧寒的女子——並不一定與豆腐有關。

Today, tofu has become a common dish on the reunion dinner table during the Chinese lunar New Year, because it sounds like the word for fortune and happiness in Chinese. The food has been thought to be able to bring good luck to the whole family.

今天,豆腐已經成爲中國農曆新年的家庭團聚餐桌上的一道常見菜餚,因爲豆腐一詞聽起來與漢語的財富和幸福相近。豆腐食品一直被認爲能給全家帶來好運。
